Brazilian Coxinha Recipe

DESCRIPTION

Ingredients
Dough:
350ml milk
50g butter
450g all-purpose flour
350ml chicken breast stock
Filling:
3 chicken breasts
2 red onions
4 garlic cloves
2 tbsp olive oil
handful of fresh parsley
1 teaspoon cayenne pepper
salt
pepper
100g cream cheese
Coating:
3 eggs
bread crumbs

Brazilian Chicken Croquettes

Cook chicken breasts in non salty water.
Melt the butter and add chicken stock with a part of milk and warm it up. Then add flour and some more milk depending on consistency. Stir together and form dough.

Transfer dough out and let it rest for a while but don’t let it get cold. It’s better to work with warm dough.
Heat the olive oil and sauté the red onion. Meanwhile shred cooked chicken breasts to small pieces and grate the garlic. When the onion gets golden brown we’ll add shredded chicken breasts. (You can also use thighs.)

Transfer the mixture into a bowl, add parsley and cream cheese. Add grated garlic, one teaspoon of salt and one teaspoon of cayenne pepper. Mix everything together and put it into a fridge to rest before filling the dough.
Cut walnut sized pieces of the dough and make patties. Add a teaspoon of chicken filling in the center of the patties, wrap them and form into shape of a pear.
Then coat the “pears” in beaten egg and bread crumbs. Fry in hot oil until golden.
Enjoy.

    I grew up in Brazil and they always had cream cheese but whatevah

    Remove the cream cheese. I am a Brazilian, grew up there and our birthday parties and weddings always had coxinhas cream cheese free. But nice that it was shared here. Something very Brazilian indeed… and I did give you a thumbs up 🙂 by the way.
